Organizing/Viewing Appointments by Date

The Assignments thing is very cool - fairly easy to use and lets us sign up for shifts at fundraising.
The trouble I’ve encountered is that completed assignments don’t fall off and assignments don’t stay sorted by date.
For instance - We signed up a few weeks ago for a couple of shifts on 11/18 and 12/11 for a coffee sales fundraiser.
Then, the call went out for a last minute but different fundraiser on 11/13 - signed up and completed that task this past weekend.
Then, the call went out for more volunteers for the 11/18 and 12/11 fundraiser - added a couple more shifts.
Now, my assignments look like this.

and daughter’s look like this (same shifts but different order depending on what ordered I added the dates.

A) - How do we mark assignments completed (but keep them for the records) so they will fall off the assignments calendar
B) - How can we sort the assignments so they are in date order to make sure we don’t miss an assignment.
I have to be able to look at assignments in date blocks so I can know easily where/when to be somewhere.
