Is there a way to copy an event, past or current, and update it before saving/posting it? That would make scheduling easier and faster for non-recurring events, i.e. ECOH, Crossover Ceremonies, etc. (I don’t want to take or move the original event and change it.) [FYI, Scouttrack has had this ability and it came in handy lots of times.]

If you look at the details of the event you want to copy, there should be a link at the top where you would record attendance etc that says Repeat Event. It allows you to change the new event before saving it.
