How do we collect money from the parents in our troop. what are the options

You can connect with PayPal or Stripe to collect money from users.
You also have the option of using TroopTrack as a ledger system. More can be read on that here. Each scout gets their own account and payments of fees can be tracked in each account.

Is there a way to use Troop Track to collect annual participation fees? Additionally, is there a way to have an automatic monthly payment option set up for families who prefer to pay monthly instead of all at once?
You can add an expense to all Money Accounts via Money - Create a bulk transaction that could be for the Annual participation fees, then everyone would know what the fees are and could create a transaction to pay for those. The only piece I don’t know is if they can just create a transaction to place money in their account, I would think so but I don’t use the payment processors so not sure the process.
There is no mechanism in TT to allow for a recurring monthly payment, however if the payment processor had such an option I suppose it could be setup to pay from their account to your Unit account, not sure how the tracking would work, might need to be manual by your treasurer but again not familiar enough with the payment processor options.
Perhaps someone else who uses either of the payment options will provide more specifics.
